Banana & Walnut Pancakes

A deliciously versatile breakfast or treat

Ingredients:

– 225g Plain flour

– 290ml Semi-skimmed milk

– 1 Banana

– 1 Egg

– 1/2 tsp Cream of tartar

– 1/2 tsp Bicarbonate of soda

– A pinch of salt

– Olive oil

– Honey or maple syrup to taste

Method:

1. Sift together the flour, bicarbonate of soda, cream of tartar and pinch of salt into a mixing bowl

2. Gradually pour half the milk into the mixture and stir

3. Add the egg and beat well

4. Stir in the remaining milk

5. When the batter will just run off the spoon it’s ready

6. Lightly grease a medium frying pan and when hot drop enough batter to make the size of pancake you’d like

7. When the pancake begins to bubble turn over until golden brown

8. Chop the banana and add on top of the pancakes

9. Crush a small handful of walnuts and add to the pancakes

10. Serve with maple syrup or honey to taste as required

Walnuts

Walnuts are an excellent source of vitamins and minerals as well as a great way to get Omega-3 into our diets. A small handful of walnuts (around 25g) contains 90% of the recommended daily intake of omega-3 fatty acids which are essential for our body’s immune system and can help to reduce symptoms of low mood. Walnuts also contain several vitamins but in particular are a great source of Vitamin E which boost the immune system and contribute to healthier skin and eyes. Vitamin E also acts as an antioxidant which can help protect against several serious illnesses including cancer. The minerals Manganese, Magnesium, Copper and Iron are also present in significant amounts in walnuts. Magnesium has been shown to help the body deal with stress and may help with symptoms of anxiety. Low levels of magnesium have also been linked to conditions such as Diabetes and high blood pressure. The mineral manganese has been linked to protecting from cognitive decline in the elderly as well as helping to regulate the body’s metabolism. Manganese has also been shown to help in managing Post Menstrual Syndrome and reducing symptoms of depression, fatigue and painful cramps.

Bananas

Bananas are excellent sources of Potassium which is essential in the health of our hearts and nervous system and may contribute to lowering blood pressure. They also contain good amounts of Vitamins B6 and C. Vitamin B6 has been linked to reducing the risk of cardiovascular disease, cancer and cognitive decline in the elderly. Vitamin C provides the same benefits but may also help to prevent cataracts and ward off the common cold.
