The Airing Cupboard Challenge finished article!
Penne pasta, chickpeas, chopped flat leaf parsley, fresh red chilli & garlic gently fried in olive oil and seasoning. This is just the basic version with ingredients I found in my cupboards and fridge. You can add chargrilled aubergine, courgette, spinach, or kale all work really well. Also, bacon, chicken or whatever you already have in your fridge.
