Butternut Squash & Parsnip Soup
Delicious, healthy and with a pinch of heat for those winter days and nights

Ingredients:
– 1/3 of a medium butternut squash diced
– 2 parsnips chopped or diced
– 1/2 an onion
– Root ginger
– 2 Garlic cloves
– 1 Pint vegetable stock
– Splash of olive oil
– Salt and pepper to taste
Method:
1. Start by heating the oil in a saucepan and add the onion, fry until soft then add the crushed garlic
2. Add the diced squash, parsnip and grated ginger and stir well
3. Pour in the vegetable stock and gently simmer
4. Add more stock if needed
5. When the vegetables are soft remove from heat and puree with a blender
6. Season to taste with salt and pepper

Butternut Squash
Butternut Squash is extremely high in Vitamin A (over 3 times the recommended daily amount per 100g) which is essential to the body in maintaining health skin and eyes as well as protecting against some forms of cancer. It also contains good levels of minerals including iron, zinc, copper, calcium, potassium, and phosphorus.
