The Airing Cupboard Challenge

I’m getting ready to post some more Cook Yourself Happier recipes on my YouTube channel and website.

We are all having an extended duvet day with self isolation, social distancing and not being able to pop out to the shops if we’ve forgotten an ingredient. Being unable to work and not wanting to go out and about is how I feel when I’m unwell. Mental illness can make you feel extremely isolated and anxious and you convince yourself your the only person in the world who feels like that. For the days when you wake up and think “How am I going to get through the day, never mind cook?” I use my Airing Cupboard recipes, you don’t feel like going out so have a look in your cupboards and freezer and see what tins, packets of rice, pasta, vegetables, soup you’ve got.

Have a think about what your favourite meals are, perhaps a comfort food that always cheers you up, a family favourite, a student budget go to, or just experiment with what you find. The Airing Cupboard challenge is to take a photo of the ingredients you’ve got and the meal that you make. There’s no pressure involved because just take your time and enjoy yourself.

Please send me your photos and what you think of your dish and we can all share what we make. Inspiration for what we might have in the cupboards as well.

Happy Cooking!
