The Mental Health Foundation is holding a Tea and Talk, Bipolar UK has listed 12 super foods that may help mental health and one of them is walnuts.

Ingredients
Crumble
100g toasted walnuts
50g butter
70g plain flour
1.5 tsp ground cinnamon
1 tsp ground ginger
pinch salt
Sour Cream Cake
180g butter
300g caster sugar
3 eggs
300ml sour cream
1 tsp vanilla extract
325g plain flour
1/2 tsp bicarbonate soda
2 tsp baking powder
pinch salt
Method
Line a loaf tin and preheat oven to 160 degrees Gas 3
Crumble
Chop toasted walnuts and set aside
Place all other crumble ingredients into a bowl and rub together with your finger tips until its crumbs
Add chopped walnuts and rub in
Sour Cream Cake
Cream butter and sugar until light and fluffy
Add eggs 1 at a time mixing well
Add sour cream and vanilla extract and mix well
Sift together flour, bicarb, baking powder and salt
Stir into the wet mix until just combined
Using a lined loaf tin, place half the cake batter into the bottom of the tin, spreading it evenly
Sprinkle half the crumble mix over the cake mix
Layer the remaining batter over the crumble. It helps to use wet fingers
Sprinkle the remaining crumble over the top of the batter
Bake at 160 degrees Gas 3 for 1 hour or until a skewer comes out clean.
